QUICK & EASY TUNA & CORN MIX

Serves 2


Ingredients:

  • 370g canned tuna, drained

  • 125g canned corn, drained

  • 2 spring onion, finely sliced

  • Handful parsley or mint, finely chopped

  • 2 tbsp Greek/natural yoghurt

  • Good squeeze lemon juice

  • Red chilli flakes (optional)

  • Rocket (optional)

  • Serve on sourdough (optional)

Method:

1. For the mix: Add tuna, corn, spring onion and parsley/mint to a bowl. Mix in the yoghurt dressing and season well. Season well and add lemon juice. Combine.

Feel free to add chilli flakes and rocket.

Serve it on any of the following:

  • On its own

  • As a dip with crackers

  • On corn thins

  • On sourdough

  • In a wrap or sandwich
