PEANUT CHICKEN LETTUCE WRAPS

Serves 4
Ingredients:
1 tablespoon extra virgin olive oil
500g chicken mince
3 cloves garlic, finely sliced
3cm piece ginger, finely chopped
1/2 cup salted roasted peanuts, chopped
3 spring onion, finely chopped
Sauce:
1/4 cup soy sauce
1/2 cup crunchy peanut butter
1 tablespoon brown sugar
1 lime, juiced
1/4 cup water
1 red chilli, finely chopped
For serving:
Lettuce cups
Coriander and lime
Method:
Heat the olive oil in a large frying pan over medium heat. Add the chicken mince to the pan and cook, breaking it up with a spatula, until it's browned and cooked through, about 5 minutes. Add the garlic and ginger to the pan and cook for another 2 minutes until fragrant.
In a small bowl, whisk together the soy sauce, peanut butter, brown sugar, lime juice, water, and chopped red chili to make the sauce.
Pour the sauce over the chicken mixture in the pan and stir to combine. Cook for another 2-3 minutes until everything is heated through and well coated in the sauce.
Stir in the chopped peanuts and spring onions, reserving some for garnish if desired.
To serve, spoon the peanut chicken mixture into lettuce cups. Garnish with additional chopped peanuts, spring onions, fresh coriander, and lime wedges.
