MARRY ME CHICKEN
Ready in 30 minutes
Serves 4
Ingredients:
2 tablespoons extra virgin olive oil
500g chicken breast, diced
4-5 cloves garlic, chopped
3/4 cup sun-dried tomatoes
2 teaspoons Italian seasoning
2 teaspoons paprika
1 cup risoni
2.5 cups chicken broth/stock
3/4 cup cream
3 cups baby spinach
3/4 cup parmesan cheese, grated
Sea salt & cracked black pepper
Method:
Heat olive oil in a large frying pan over medium-high heat.
Add diced chicken breast and cook until browned on all sides, about 5-7 minutes.
Stir in chopped garlic, sun-dried tomatoes, Italian seasoning, and paprika. Cook for another 2 minutes until fragrant.
Add risoni to the pot and stir to combine with the chicken and spices.
Pour in chicken broth/stock and bring to a simmer. Reduce heat to medium-low and cover the pot. Let it cook for about 8-10 minutes until the risoni is tender and has absorbed most of the liquid.
Stir in cream, baby spinach, and grated parmesan cheese. Cook for an additional 2-3 minutes until the spinach has wilted and the sauce has thickened slightly.
Season with salt and pepper to taste.
Serve hot, garnished with additional parmesan cheese if desired.
