MARRY ME CHICKEN

Ready in 30 minutes

Serves 4

Ingredients:

  • 2 tablespoons extra virgin olive oil

  • 500g chicken breast, diced

  • 4-5 cloves garlic, chopped

  • 3/4 cup sun-dried tomatoes

  • 2 teaspoons Italian seasoning

  • 2 teaspoons paprika

  • 1 cup risoni

  • 2.5 cups chicken broth/stock

  • 3/4 cup cream

  • 3 cups baby spinach

  • 3/4 cup parmesan cheese, grated

  • Sea salt & cracked black pepper 

 Method:

  1. Heat olive oil in a large frying pan over medium-high heat.

  2. Add diced chicken breast and cook until browned on all sides, about 5-7 minutes.

  3. Stir in chopped garlic, sun-dried tomatoes, Italian seasoning, and paprika. Cook for another 2 minutes until fragrant.

  4. Add risoni to the pot and stir to combine with the chicken and spices.

  5. Pour in chicken broth/stock and bring to a simmer. Reduce heat to medium-low and cover the pot. Let it cook for about 8-10 minutes until the risoni is tender and has absorbed most of the liquid.

  6. Stir in cream, baby spinach, and grated parmesan cheese. Cook for an additional 2-3 minutes until the spinach has wilted and the sauce has thickened slightly.

  7. Season with salt and pepper to taste.

  8. Serve hot, garnished with additional parmesan cheese if desired.
