EGG, RED PEPPER & FETA TORTILLA BREAKFAST WRAP

Serves 1


Ingredients:

  • 1 medium/large tortilla

  • 2-3 eggs, lightly whisked

  • Sea salt & cracked black pepper

  • 1 teaspoons butter

  • 3-4 mushrooms, sliced

  • 1/2 cup jarred roasted red peppers, chopped

  • 1/2 spinach, chopped

  • 1/4 cup feta cheese, crumbled

To serve: extra spinach, avocado slices and lemon juice

Method:

1. Place a large frying pan (one that is about the size of the tortilla) onto medium heat. Add the butter and mushrooms and let them cook for 2-3 minutes. Then add the red pepper pieces and spinach. Whisk and season the eggs with salt and pepper. Pour in the eggs onto the mushrooms. Crumble over the feta and cook for 3 minutes.

2. Place the tortilla on top of the eggs, then flip the tortilla over with a spatula or dinner plate, so that the mushrooms are facing up. Slip it back into the frying pan.

3. Add the spinach and avocado pieces. Squeeze over some fresh lemon juice. Fold over the tortilla and slice into wedges and enjoy.
