ZUCCHINI & BACON SLICE

Makes 14-16 serves

Ingredients:

  • 2 small/medium zucchini, grated (excess juice squeezed)

  • 5 rashers bacon, diced

  • 1 brown onion, diced

  • 1 cup tasty cheese, grated

  • 5 large eggs, whisked

  • 1 cup self raising flour

  • 1/4 cup vegetable oil OR light extra virgin olive oil

  • Salt & Pepper

Method:

1. Preheat oven to 180 degrees Celsius.

2. In a large bowl, add eggs, SR flour, grated zucchini, bacon, onion, oil, grated cheese and season well. Stir to combine all ingredients.

3. Pour into a lined cake or lamington tin (approx. 15cm x 23cm) and flatten down with a spoon or spatula.

4. Bake in the oven for approx 35-40 mins or until golden on top and cooked throughout.
