TUNA, PEAR & AVOCADO SALAD
An easy, no-fuss salad that you can throw together in under 15 minutes. It’s light, crunchy, fresh and delicious.
Serves 2
Ingredients:
3 cups iceberg lettuce, shredded
1 Lebanese cucumber, cut into rounds
185g tinned tuna, drained
1/2 pear, sliced thinly
1/2 cup green beans, chopped
1/2 Spanish onion, thinly sliced
1 small avocado, sliced
1/3 cup chopped almonds, toasted or raw
2 tablespoons extra Virgin olive oil
1/2 lemon, juiced
Method:
Add all ingredients to a bowl. Drizzle over the extra Virgin olive oil and squeeze over the lemon juice. Toss gently. Feel free to season with salt and pepper if you wish.
