TUNA, PEAR & AVOCADO SALAD

An easy, no-fuss salad that you can throw together in under 15 minutes. It’s light, crunchy, fresh and delicious.

Serves 2

Ingredients:

  • 3 cups iceberg lettuce, shredded

  • 1 Lebanese cucumber, cut into rounds

  • 185g tinned tuna, drained

  • 1/2 pear, sliced thinly

  • 1/2 cup green beans, chopped

  • 1/2 Spanish onion, thinly sliced

  • 1 small avocado, sliced

  • 1/3 cup chopped almonds, toasted or raw

  • 2 tablespoons extra Virgin olive oil

  • 1/2 lemon, juiced

Method:

  1. Add all ingredients to a bowl. Drizzle over the extra Virgin olive oil and squeeze over the lemon juice. Toss gently. Feel free to season with salt and pepper if you wish.
