TUNA, CORN, BEAN & CELERY SALAD

Easy, quick and really yummy! A perfect salad to make on those crazy busy days when you need something wholesome.

Serves 2

Ingredients:

  • 400g can four bean mix, drained and rinsed

  • 1 cup spinach, chopped

  • 1 cup cherry tomatoes, chopped

  • 400g canned corn, drained

  • 2 celery ribs, finely chopped

  • 1 Lebanese cucumber, diced

  • 185g tinned tuna, drained

  • 1/2 small Spanish onion, finely chopped

Dressing:

  • 1 tablespoon mayonnaise

  • 1 tablespoon extra virgin olive oil

  • 1 teaspoon white wine vinegar or apple cider vinegar

  • 1 small lemon, juiced

  • Pinch sea salt flakes

  • Cracked black pepper

Method:

  1. For the dressing: Mix together all ingredients in a small bowl or jug.

  2. For the salad: Add all salad ingredients to a medium bowl and combine. Drizzle over the dressing and toss gently.
