TUNA, CORN, BEAN & CELERY SALAD
Easy, quick and really yummy! A perfect salad to make on those crazy busy days when you need something wholesome.
Serves 2
Ingredients:
400g can four bean mix, drained and rinsed
1 cup spinach, chopped
1 cup cherry tomatoes, chopped
400g canned corn, drained
2 celery ribs, finely chopped
1 Lebanese cucumber, diced
185g tinned tuna, drained
1/2 small Spanish onion, finely chopped
Dressing:
1 tablespoon mayonnaise
1 tablespoon extra virgin olive oil
1 teaspoon white wine vinegar or apple cider vinegar
1 small lemon, juiced
Pinch sea salt flakes
Cracked black pepper
Method:
For the dressing: Mix together all ingredients in a small bowl or jug.
For the salad: Add all salad ingredients to a medium bowl and combine. Drizzle over the dressing and toss gently.
