CREAMY CHICKEN & PASTA SALAD

I was never a fan of pasta salads, until I experimented and found that pasta salads can be absolutely delicious if you find a good recipe with ingredients you love. This is one of those recipes. I LOVE it and it’s totally changed my view on pasta salads.

Enjoy it for lunch, dinner or take it to your next event when you’re asked to bring a plate of something. It’s SO YUM!!!!!

Serves 4

Ingredients:

  • 1.5 cups pasta, cooked

  • 1 cup rocket

  • 3/4 cup cherry tomatoes, quartered

  • 2 lebanese cucumbers, chopped

  • 1 cup cooked chicken, shredded

  • 1/4 cup pine nuts, toasted

  • 1/4 cup goats cheese, crumbled

  • 1/2 cup parmesan, grated

    Dressing:

  • 1 cup basil leaves

  • 2 spring onion, chopped

  • 1 garlic clove

  • 1/2 lemon, juice squeezed

  • 1/2 avocado

  • 2 tbsp natural/Greek yoghurt

  • Salt & Pepper

Method:

  1. For the salad: Add all ingredients, except the parmesan cheese, to a large bowl and combine well.

  2. For the dressing: Place all ingredients in a blender, food processor or mortar & pestle and blend/grind until combined. Then stir through the Greek yoghurt.

  3. Drizzle the dressing all over the salad and mix well to combine. Then sprinkle over the grated parmesan cheese.
