CREAMY CHICKEN & PASTA SALAD
I was never a fan of pasta salads, until I experimented and found that pasta salads can be absolutely delicious if you find a good recipe with ingredients you love. This is one of those recipes. I LOVE it and it’s totally changed my view on pasta salads.
Enjoy it for lunch, dinner or take it to your next event when you’re asked to bring a plate of something. It’s SO YUM!!!!!
Serves 4
Ingredients:
1.5 cups pasta, cooked
1 cup rocket
3/4 cup cherry tomatoes, quartered
2 lebanese cucumbers, chopped
1 cup cooked chicken, shredded
1/4 cup pine nuts, toasted
1/4 cup goats cheese, crumbled
1/2 cup parmesan, grated
Dressing:
1 cup basil leaves
2 spring onion, chopped
1 garlic clove
1/2 lemon, juice squeezed
1/2 avocado
2 tbsp natural/Greek yoghurt
Salt & Pepper
Method:
For the salad: Add all ingredients, except the parmesan cheese, to a large bowl and combine well.
For the dressing: Place all ingredients in a blender, food processor or mortar & pestle and blend/grind until combined. Then stir through the Greek yoghurt.
Drizzle the dressing all over the salad and mix well to combine. Then sprinkle over the grated parmesan cheese.
